Zanzibar Masala

Foods to eat with Zanzibar Masala: Beans, chutney, eggs, fish, griddle breads, meats, paneer, peas, pitas, potatoes, rice, roasts, seafood, stews, tomatoes, and all vegetables!!!

Zanzibar Egg Curry

9 eggs

4 small onions chopped

2 tsp. garlic minced

4 large tomatoes chopped

1 jar Zanzibar Masala

1/8 tsp. asafetida

2 cups frozen peas

1/4 cup sunflower oil

salt and cilantro to taste

Puree eggs, onions, garlic, and tomatoes.  In large wok add oil, bring to medium heat and add pureed mixture.  Sauté 3 minutes, add spices, peas, and salt.  May need extra moisture such as 1/2 cup water or broth.  Simmer on low heat for 5-7 minutes.  Garnish with cilantro, serve with fried potato or rice.

Zanzibar Masala is an amazing combination of butter powder, cumin, coriander, cinnamon, lemon grass, ginger, cardamom, cloves, and a few other amazingly aromatic spices.

Good with shrimp or chicken, in rice, as curry spice, in stews, and for tenderizing meats such as lamb, mutton, pork, elk, and wild game (must marinate overnight to tenderize, add cane sugar for sweet mix).
