This blend was made using white and black sesame seeds, pink peppercorns, Alaea Hawaiian sea salt, and purple basil.  Great on tuna steaks, fish, and chicken.

Crust can be used to coat objects prior to cooking.  The most popular way of using this crust is to thoroughly coat a tuna steak and then pan fry with olive oil.

Herbed Tempura Batter

1 c. flour

1/2 c. room temperature water

1 T. sesame oil

1 T. Sesame Peppercorn Crust Blend

1 T. salt

-Whip together ingredients.  You may need more water depending on how thick you want the batter to be.  Prior to frying dip tuna, vegetables, etc., into flour.  Then dip into batter, and immediately drop into vegetable frying liquid.   Fry for 5-8 minutes on high heat.  Excellent with fried mushrooms, zucchini, and onions.

It is back after a little hiatus.  I love the Sesame Peppercorn Crust.  I have improved the original recipe with some new ingredients: purple basil, chervil, peppercorn mélange, and Alaea Hawaiian Sea salt.
