Caribbean Seasoning is a tamed down version of jerk rub.  My blend can be made into hot, sweet, or mild dishes depending on the amounts used.  Fruit is amazing with this spice blend along with seafood, chicken, salsa, and Caribbean vegetables.

Foods to eat with Caribbean Seasoning:

Apples, avocado, BEANS (the American sort), beef, breads, carrots, celery, chicken & turkey, chili, chocolate, corn, cucumbers, eggs, fish, fruits, greens, ham, meatloaf, onions, pasta, peas, pork (pulled pork especially), sweet potatoes, pumpkin, rice, salads, salmon, seafood, stews, spinach, squash, tomatoes, turnips, and vegetables of all sorts.

 

Caribbean Spice Recipes

Marinades

1 cup vegetable oil, 1/2 cup rum, 1 T. Caribbean Seasoning

Glazes

Caribbean is good with the following jams: apricot, cherry, mango, orange, papaya, pineapple, plum, pomegranate, raspberry, strawberry, and tomato marmalade.  Melt half pint of jam over heat, (optional: add 1 T.  Rum), add 1 T. Caribbean Seasoning.  After the glaze is made pour over fish, ham, chicken or seafood before cooking. 

White Fish Tacos

1 package soft shelled flour tortillas

¼ head red cabbage finely shredded

3 filets mahi-mahi

Pineapple salsa (recipe below)

1 tsp. Caribbean seasoning

3 T. spiced rum

Jack and cheddar cheese mix

1 avocado, pit and peel removed, sliced

- Marinate fish in rum and spice over night.  Grill fish or bake.  Let cool and crumble.  Assemble tacos to you liking; with fish, cabbage, cheese, avocado, and salsa.

Pineapple Salsa

1 small can crushed pineapple, liquid removed

½ c. minced onion

½ c. red bell pepper minced

1 jalapeno, seeded and minced

1 tsp. minced garlic

1 T. each of green onion and cilantro

½ tsp sea salt

1 tsp. rice vinegar

2 T. honey

1 tsp. Caribbean seasoning

- Stir together ingredients.  Let sit 2 hours before serving.

Habanero Chicken with Rice

Olive oil and 1 T. Caribbean seasoning

½ c. rum

1 Habanero minced

3 chicken breasts

-Marinade chicken for two hours and grill.  Cool chicken and shred.  Add chicken to cooked rice for 4 with; 1 can tropical fruit in syrup, ¼ c. chopped fresh cilantro, ½ minced red bell pepper, and 1 tsp rice vinegar.  Stir together serve hot or cold.

 

 

 

 

 

Caribbean Turkey Spread

1/2 lb. cooked turkey, cubed

1 stalk celery minced

2 T. minced red onion

2 T. minced red bell pepper

1/4 cup mayo

1/4 cup sour cream

2 T. lime juice

Salt and pepper to taste

2 tsp. Caribbean Seasoning

-Pulse turkey in food processor until finely ground; transfer to a mixing bowl.  Add remaining ingredients and stir well.  Refrigerate 2 hours to allow flavors to blend; adjust seasoning to taste.

Serve with crackers as appetizer or on sandwiches.

Caribbean Seasoning

Caribbean cuisine is a fusion of Spanish, French, African, Amerindian and Indian cuisine.

Spanish-speaking islands of the Caribbean tend to prefer more savory spices to these sharper flavors. Lime and garlic, are more common in Cuba than pimento (or "allspice"). Other common flavors in the region include cinnamon and nutmeg.

Seafood is very common cuisine in the islands, due in part to their location. Each island will likely have its own specialty.

Another Caribbean mainstay is rice, but you'll find the rice on each island may be a little different. Some season their rice, or add peas and other touches - like coconut. Sometimes the rice is yellow, but other times it is part of a dish.

 

So it all boils down to a couple things, fruit, seafood, and rice; a wonderful combination.
