This spice is used as a condiment in Africa. The spice originated in Ethiopia but it is good with anything. The first ingredient is cayenne so it is not for the timid. These two blends are the spiciest so far! Good with lamb, beef, chicken, seafood, and vegetables of all sorts. |
Berbere Hot Pepper Spice |
HarissaMy Harissa is a combination of chili peppers, garlic, coriander, caraway, red bell pepper, and sea salt. For every T. of spice add 2 T. water and 1 tsp. oil. Foods good with Harissa Spice: Beef, beets, breads, cabbage, carrots, celery, cheese, couscous, cucumber, eggs, goose, noodles, onions, pork, potato, pumpkin, rice, salmon, seafood, soups & stews, sour cream, spinach, squash-summer & winter, stuffing, tomatoes, turnips, and vegetables. |

Berbere Hot Pepper SpiceBerbere is an Ethiopian sauce made from a wet combination of red chilis, cardamom, basil, and spices. Berbere spices is just as complicated as curry if not more so. The recipe varies from cook to cook, but sometimes includes; cloves, nutmeg, garlic, cinnamon, coriander, and ginger. Berbere is often used in soups and stews. Foods good with Berbere Spice: Apples, artichokes, avocado, beans, beef, bread, cabbage, carrots, cauliflower, celery, cheese, chicken, chili, chocolate, corn, cucumbers, eggplant, eggs, fish, fruit, greens, ham, lamb, meatloaf, mushrooms, onions, parsnips, pasta, pears, peas, pork, potato, sweet potato, pumpkin, rice, salmon, seafood, soups & stews, spinach, squash, stuffing, tomatoes, turnips, and vegetables. Oh yeah….BEEF JERKY! Thank you Logan… Berbere Paste Mix 2 T. Berbere spice with 4 T. water and set aside for 1 hour. After rehydrating add oil for red chili pepper oil. Or add 2 T. olive oil, 1 T. raisin vinegar and use as a hearty (and HOT) lamb rub! Serve the lamb with roasted red peppers, potato, and rice, makes my mouth water just thinking about it! |
