White Fish Blend has a new name: Bar Harbor Blend.
This blend contains no fish, but tastes excellent on seafood. White Fish Seasoning combines onion, garlic, lemon, dill, and peppercorns. Excellent with chicken, potatoes, tomato based products, sour cream, cream sauces, and of course all fish.
White Fish/Bar Harbor Blend:
This started out as a wonderful coriander spice mix I wanted to enlighten everyone to but became something more familiar. You don't have to eat this with fish, you don't even have to like fish to enjoy this spice blend. It is simple:
All these things are good with fish and seafood, but also compliment chicken, cucumbers, smoked salmon, turkey, and white sauces.
White Fish/Bar Harbor Recipes:
Per fish (salmon, cod, flounder, trout, red snapper, halibut, perch, tuna) filet add 1 T. olive, butter, or margarine with 1 tsp. White Fish Spice/Bar Harbor Blend.
-Make a rice side as directed but add 1 tsp. Bar Harbor/White Fish Blend per cup of rice.
Bar Harbor Dip:
8 oz. of cream cheese or sour cream 1 T. White fish Blend
-use with crackers, chips, or as vegetable dip
Chicken with sautéed spinach:
4 boneless chicken breasts 1 T. Bar Harbor Blend/ White Fish Spice 2 T. olive oil 1 lb bag of fresh spinach 1 c. red onions cut in rings 1 T. red wine vinegar or raspberry vinegar 1/2 c. white wine 1 T. olive oil 1 tsp. white Fish Spice
-Coat Chicken in the olive oil and 1 T. spice, bake in 350 degree oven for 20-30 minutes in a covered casserole dish.
-In large saute pan add liquid ingredients and bring to medium heat, or boiling. Add red onion and spice, saute for 3 minutes, slowly add handfuls of spinach. Stir often until all spinach is added, and starts to wilt. Remove from heat and cover. Serve Chicken on top of the spinach. Serve with lemon wedges.
Marinated Cucumbers:
2 cucumbers sliced 3 green onions chopped 2 cups water 1/2 cup rice vinegar 2 T. White Fish Blend/Bar Harbor Blend
Stir together and let sit 1 hour before serving.
Smoked Salmon Canapés:
8 oz. smoked salmon-should come shaved in thin slices 8 oz. cream cheese 1 1/2 tsp. White Fish Spice/Bar Harbor 1 tsp mayo 1 tsp. lemon juice Thin sliced cucumbers Crackers or pumpernickel bread baked into small squares Chives cut into 1/2 inch bits
-Now, to any one like me this is heaven. I love to eat it, I love to make it, and I love to think about how I will make it. This entire recipe should be fun. Mix the cream cheese with the mayo, lemon juice, and the spice, then set aside while you get the rest together.
Lay out the entire loaf of pumpernickel bread, or two sleeves of the crackers. Cut up enough cucumbers to cover all the cracker/pumpernickel, set aside. Cut up a handful of chives. Break up fish into bite sized pieces. Now for the assembly...
Cracker/pumpernickel, Cream cheese dip spread on top, Cucumber on next, Salmon on top of the cucumber, and chives to garnish!!!
